Ingredients
Pour into the Fresh Fri measuring cap 75ml of oil
4 cups chopped sukuma wiki
2 medium-sized sweet potatoes, peeled and diced
1 onion, sliced
2 tomatoes, diced
2 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon ground turmeric
1 teaspoon ground cumin
Salt and pepper to taste
Fresh lemon wedges for serving (optional)
Preparation
Heat a non-stick skillet over medium heat. Add Fresh Fri Cooking Oil and a small amount of water or vegetable broth.
Add sliced onions, minced garlic, and grated ginger to the skillet. Sauté until the onions are translucent and fragrant.
Stir in diced sweet potatoes and cook for about 5 minutes until they start to soften.
Add diced tomatoes, ground turmeric, ground cumin, salt, and pepper to the skillet. Cook for another 5 minutes until the tomatoes break down and form a sauce.
Add chopped sukuma wiki to the skillet. Cook, stirring occasionally, until the greens are wilted but still bright green.
Taste and adjust seasoning if needed. If the stir-fry seems dry, you can add a splash of water to create more sauce.
