Ingredients
Pour into the Fresh Fri measuring cap 75ml of oil
1 cup dried green or brown lentils, rinsed and drained
1 onion, chopped
2 tomatoes, diced
2 carrots, diced
2 potatoes, diced
2 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
4 cups vegetable broth
Salt and pepper to taste
Fresh Dania for garnish (optional)
Preparation
In a large pot, heat a small amount of water over medium heat. Add the Fresh Fri Cooking Oil, and chopped onions and sauté until softened.
Add minced garlic and grated ginger to the pot. Cook for another minute until fragrant.
Stir in diced tomatoes, carrots, and potatoes. Cook for a few minutes until slightly softened.
Add rinsed lentils, ground cumin, ground coriander, turmeric powder, vegetable broth, salt, and pepper to the pot. Stir to combine.
Bring the mixture to a boil, then reduce heat to low and simmer, covered, for about 25-30 minutes or until the lentils and vegetables are tender.
Taste and adjust seasoning if needed. If the stew is too thick, you can add more vegetable broth or water to reach your desired consistency.
Serve the Kenyan lentil stew hot, garnished with fresh cilantro if desired. Enjoy this hearty and nutritious dish!
