Ingredients
4 medium-sized potatoes
75 ml Fresh Fri cooking oil
1 large onion, diced.
3 cloves garlic, minced.
2 teaspoons curry powder
¾ teaspoon salt
¼ teaspoon cayenne pepper
2 diced tomatoes
3 cups of water, divided.
1 cup of green peas rinsed.
Preparation
In a large pan pour Fresh Fri Oil over medium heat.
Add the diced onions and minced garlic to the pan. Sauté until the onions are
translucent and fragrant.
Sprinkle the curry powder, salt, and cayenne pepper over the onions and garlic. Stir
well to coat the onions with the spices.
Add the cubed potatoes to the pan. Cook for about 5 minutes, stirring occasionally,
until the potatoes start to soften.
Pour in the diced tomatoes and 2 cups of water. Stir everything together.
Cover the pan and let the curry simmer for about 15-20 minutes, or until the potatoes
are tender.
Check the consistency of the curry. If it’s too thick, add the remaining cup of water
gradually until you reach your desired consistency.
Add the rinsed green peas to the curry. Stir well and let it cook for an additional 5
minutes.
Taste and adjust the seasoning, adding more salt or spices according to your
preference.Remove the pan from heat Once the potatoes and peas are cooked to your liking.
