Ingredients

Pour into the Fresh Fri measuring cap 75ml of oil

1 cup dried green or brown lentils, rinsed and drained

1 onion, chopped

2 tomatoes, diced

2 carrots, diced

2 potatoes, diced

2 cloves garlic, minced

1 tablespoon grated ginger

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

4 cups vegetable broth

Salt and pepper to taste

Fresh Dania for garnish (optional)

Preparation

  • In a large pot, heat a small amount of water over medium heat. Add the Fresh Fri Cooking Oil, and chopped onions and sauté until softened.
  • Add minced garlic and grated ginger to the pot. Cook for another minute until fragrant.
  • Stir in diced tomatoes, carrots, and potatoes. Cook for a few minutes until slightly softened.
  • Add rinsed lentils, ground cumin, ground coriander, turmeric powder, vegetable broth, salt, and pepper to the pot. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low and simmer, covered, for about 25-30 minutes or until the lentils and vegetables are tender.
  • Taste and adjust seasoning if needed. If the stew is too thick, you can add more vegetable broth or water to reach your desired consistency.
  • Serve the Kenyan lentil stew hot, garnished with fresh cilantro if desired. Enjoy this hearty and nutritious dish!
