Lemon Garlic Potatoes

  • 1 kg potatoes, washed and cut into wedges
  • 50 ml Fresh Fri cooking oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Preheat your oven to 200°C (400°F).
  2. Wash and cut the potatoes into wedges.
  3. In a large bowl, combine Fresh Fri cooking oil, minced garlic, lemon juice, lemon zest, dried oregano, dried thyme, salt, and pepper. Mix well.
  4. Add the potato wedges to the bowl and toss them until they are evenly coated with the mixture.
  5. Spread the coated potato wedges in a single layer on a baking sheet. Bake in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy on the edges. Turn the potatoes halfway through the baking time to ensure even cooking.
  6. Remove from the oven and sprinkle with fresh parsley.
  7. Serve with a side of salad
