Lentil Curry

This lentil curry is flavorful and a soul-warming dish, tantalizingly spiced to leave you yearning for more.

  • 1 cup dried green or brown lentils, rinsed and drained
  • 50ml Fresh Fri Cooking Oil
  • 1 onion, chopped.
  • 2 tomatoes, diced.
  • 2 cloves garlic, minced.
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 1 can (400ml) coconut milk
  • Salt and pepper to taste


  1. In a medium pot, pour into Fresh Fri Cooking Oil and heat add chopped onions, and
    tomatoes and sauté until softened.
  2. Add minced garlic and grated ginger to the pot. Cook for 2 minutes.
  3. Add rinsed lentils, ground cumin, curry powder, turmeric powder, salt, and pepper to
    the pot. Stir to combine.
  4. Add coconut milk stir evenly and let it simmer covered, for about 20 minutes or until
    the lentils are tender.
  5. Serve the Lentil curry with steamed rice.
