Sukuma Wiki and Sweet Potato Stir-Fry

Ingredients

Pour into the Fresh Fri measuring cap 75ml of oil

4 cups chopped sukuma wiki

2 medium-sized sweet potatoes, peeled and diced

1 onion, sliced

2 tomatoes, diced

2 cloves garlic, minced

1 tablespoon grated ginger

1 teaspoon ground turmeric

1 teaspoon ground cumin

Salt and pepper to taste

Fresh lemon wedges for serving (optional)

Preparation

  • Heat a non-stick skillet over medium heat. Add Fresh Fri Cooking Oil and a small amount of water or vegetable broth.
  • Add sliced onions, minced garlic, and grated ginger to the skillet. Sauté until the onions are translucent and fragrant.
  • Stir in diced sweet potatoes and cook for about 5 minutes until they start to soften.
  • Add diced tomatoes, ground turmeric, ground cumin, salt, and pepper to the skillet. Cook for another 5 minutes until the tomatoes break down and form a sauce.
  • Add chopped sukuma wiki to the skillet. Cook, stirring occasionally, until the greens are wilted but still bright green.
  • Taste and adjust seasoning if needed. If the stir-fry seems dry, you can add a splash of water to create more sauce.
