Season the chicken on both sides with salt, pepper, dried basil, and dried oregano.
In a large skillet, heat 75 ml of Fresh Fri cooking oil over medium-high heat until hot but not smoking.
Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and cook until fragrant, about 1 minute. Add the diced tomatoes and cook for another 2-3 minutes until they start to soften.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
Return the cooked chicken breasts to the skillet and heat through, spooning the tomato and spinach mixture over the chicken.
Remove from heat. Garnish with chopped fresh basil and sprinkle with grated Parmesan cheese, if desired. Serve hot.
